This easy cucumber sushi recipe for toddlers is a great option when you want to do some cooking with kids! Making sushi is easy and so much fun. This healthy vegetarian sushi recipe is perfect for toddlers and older children. They can even give chopsticks a try for some extra fun!

Every recipe has its best place and time to cook. Sushi can seem particularly time-consuming; However, despite the multiple steps to make a healthy sushi roll, it is so much fun and quite easy! Each cucumber roll you make is like a little piece of art. Kids love playing with different methods for adding the ingredients, rolling up the sushi, and then finally decorating at the end. Making sushi is a great time for kids to play with their food.

Cucumber Sushi Ingredients

All the ingredients for this healthy toddler recipe are fresh and easy to find. Below are the main ingredients for this easy sushi roll for kids.

  • Cucumber: Cucumber is one of the easiest ways to roll sushi! It stays together well and is simply peeled to make the outer “roll” holding all the yumminess together.
  • Carrot: Carrots are naturally low in fat and are a great source of fibre. They also provide a good amount of vitamin A which is important for growing bodies and healthy vision.
  • Avocado: Avocado is a super source of healthy calories and fat, and is packed with important nutrients for growing bodies like magnesium, vitamin k, and vitamin C.
  • Marscapone Cheese: Marscapone cheese is a creamy and flavourful way to keep these sushi rolls stuck together,

How to make cucumber sushi rolls

This healthy toddler recipe is actually much easier than it may look. The most time-consuming part of this recipe is the one hour it takes to bake and cool the carrot. You can cook the carrot a day ahead if you’d like so that you and your kiddos can go straight to the fun part!

Once the carrot is completely cooled, thinly slice the carrot, then add it to a bowl along with the apple cider vinegar and smoked paprika. Stir and leave aside to soak while you season the mascarpone cheese.

Now it’s time to put it all together! Lay out a thin layer of cucumber and spread a layer of cheese. Finally, add a slice of seasoned carrot and avocado then roll it up!

Serve cucumber sushi with:

Low sodium soy sauce (for adults only) or Coconut Aminos for toddlers. You can also sprinkle the top with toasted sesame seeds!

This healthy and easy cucumber sushi recipe for toddlers is a great option when you want to do some cooking with kids! Kids love rolling sushi!

Ingredients

  • 1 large carrot
  • 1 Cucumber
  • ½ tsp apple cider vinegar
  • ½ tsp smoked paprika
  • 4 tbsp Marscapone cheese
  • ½ tsp garlic powder
  • 1 avocado thinly sliced
  • To Serve
  • 1 tsp toasted sesame seeds
  • Low sodium soy sauce for adults only or Coconut Aminos for toddlers, low sodium soy sauce has 1/3 the amount of salt of low sodium soy sauce.

Method

  • Preheat oven to 180ºC.

  • Top and tail the carrot, then place into tin foil and bake for 1 hour. Leave to cool fully before removing from the foil.

  • Peel the outer skin of the cucumber (you can use this in a salad later). Then using the peeler peel the flesh lengthways into flat strips, finally use a little kitchen roll to pat dry.

  • Thinly cut the carrot, then add to a bowl along with the apple cider vinegar and smoked paprika. Stir and leave aside.

  • In a bowl mix together the Marscapone cheese and garlic powder.

  • Spread the Marscapone onto each length of the cucumber, add a piece of carrot and a little avocado and roll.

  • To serve sprinkle over sesame seeds and dip in either low sodium soy sauce (for adults) or coconut aminos for toddlers. If offering to babies under 2, just leave out the sauce.
